How Is Decaf Coffee Made? The 4 Methods Explained

The short answer

Decaf coffee is made by removing most of the caffeine from green (unroasted) beans, before they are roasted. Caffeine dissolves in water, so every method starts by soaking or steaming the beans to open them up, then pulls the caffeine out using one of four things: a solvent, pressurised carbon dioxide, or plain water. The beans are then dried, roasted and brewed like any other coffee.

Decaf is not 100% caffeine-free (a cup keeps a few milligrams), but that is a tiny fraction of a regular coffee.

It all happens before roasting

Every decaffeination method works on green coffee beans, while they are still raw. The challenge is removing the caffeine without stripping out the sugars, oils and aromatics that make coffee taste good. How well a decaf keeps its flavour comes down to which of the following four methods was used.

Method 1: Direct solvent

The most common and cheapest method worldwide. Steamed beans are rinsed directly with a food-safe solvent, usually ethyl acetate or methylene chloride, which bonds to the caffeine and carries it away. The beans are then steamed again to remove any residue before roasting.

When ethyl acetate is derived from sugarcane, you will often see it marketed as the “sugarcane” or “natural EA” process, popular with Colombian coffees.

Method 2: Indirect solvent

Here the beans are first soaked in hot water, which pulls out the caffeine and the flavour compounds. The beans are removed, and the solvent strips only the caffeine from that water. The now caffeine-free, flavour-rich water is returned to the beans so they can soak their own flavours back up. The solvent never touches the beans directly.

Method 3: Carbon dioxide (CO²)

A more premium, modern method. Under high pressure, CO² enters a “supercritical” state where it behaves like both a gas and a liquid. In this state it circulates through the beans and selectively binds to caffeine molecules while leaving the flavour compounds largely intact. It is effective and chemical-solvent-free, but the equipment is expensive, so it is mostly used for larger commercial batches.

Method 4: Swiss Water Process (chemical-free)

A 100% chemical-free method, and a Canadian one, developed by the Swiss Water Decaffeinated Coffee Company in Burnaby, British Columbia. It works purely on water, solubility and osmosis:

  1. A first batch of green beans is soaked in hot water to dissolve the caffeine and flavours, creating a “flavour-charged” liquid called Green Coffee Extract (GCE). Those first beans are discarded.
  2. The GCE is passed through an activated charcoal filter that traps only the caffeine, leaving the flavours behind.
  3. Fresh green beans are then soaked in this caffeine-free, flavour-saturated water. Because the water is already full of coffee flavour, only the caffeine migrates out of the new beans, so their taste stays put.

It is gentle, chemical-free and flavour-preserving, which is why many specialty roasters prefer it.

Is decaf actually caffeine-free?

No, but it is close. To be labelled “decaffeinated,” at least about 97% of the caffeine must be removed (stricter in the EU). In practice a cup of decaf has roughly 2 to 5 mg of caffeine, compared with around 95 mg in a regular cup. So it is not zero, but you would need to drink a lot of decaf to feel it.

Is decaf coffee safe?

For the vast majority of people, yes. The CO² and Swiss Water methods use no chemical solvents at all. Solvent methods are tightly regulated: residue limits are extremely low, and most of any trace evaporates during roasting and brewing. If you would rather avoid solvents entirely, look for coffee labelled Swiss Water or CO² process, or the naturally derived sugarcane / EA process.

Does decaf taste different?

A little. Decaffeination is hard on delicate aromatics, so older or cheaper decafs could taste flat. Modern methods, especially Swiss Water and CO², have narrowed the gap a lot, and a fresh, well-roasted decaf from good beans tastes very close to the real thing. Freshness matters even more with decaf than with regular coffee.
